Kitchari Recipe

Often referred to as Ayurvedic Chicken Soup, Kitchari is easy to digest, and uses warming spices to gently stimulate the digestion. It’s also a complete protein that is simple to make, delicious, and nourishing for the body! It’s often eaten with vegetables that can be added in while cooking or cooked and eaten alongside.

Serves 3-4

What’s in it:

● 1 cup moong dal/moong dal, split yellow lentils (NOT the whole green ones)
● 1 cup basmati rice
● 4 cups water (if you want it more moist/soupy, use more water)
● 3 tablespoons of ghee
● 1 teaspoon mustard seeds
● 1 teaspoon cumin seeds

Optional:

1 inch piece of fresh ginger (root), peeled, chopped up well
1⁄4 teaspoon of turmeric

How to make it:

Wash and strain the mung dal and the rice. Then heat the ghee gently in a pot and add spices.  Once mustard seeds begin to pop (like popcorn), add the rice and dal mixture. Sauté for 2-3 minutes, then add water. Stir. Cover. Turn on low heat and cook until all water is absorbed. Serve with ghee and you can add a little salt.

Adding your vegetables:  You can add seasonal vegetables to this (2 cups of veg for this recipe), or cook veggies to eat alongside. Green beans, carrots, asparagus are great veggies for cleansing.
